Training covers essential skills in classic baking techniques, pastry production, doughs, custards and introductory chocolate work.<\/li>\n<\/ul>\n<p><strong>Cohort 20: Dessert Design in the Hot Kitchen<\/strong><\/p>\n<ul>\n<li>April 13&#8211;17, 2026: this course focuses on crafting show-stopping desserts without a traditional bakery setup. Parti<abbr>CIP<\/abbr>ants will learn to adapt to the challenges of a hot kitchen, creatively utilizing heat-based equipment to deliver exquisite fine-dining sweets.<\/li>\n<\/ul>\n<p>Both cohorts are led by Chef <a href=\"https:\/\/www.ciachef.edu\/cia-bios\/kristin-egan\/\">Kristin Egan<\/a>, a <abbr>CIA<\/abbr> associate professor, alumna, and Certified Master Baker who has worked in acclaimed kitchens including L\u2019Atelier de Jo\u00ebl Robuchon and The Modern.<\/p>\n<p><strong>Eligibility and scholarships <\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2026\/02\/system-cip-cohort-2-300x169.jpg\" alt=\"pastry\" width=\"300\" height=\"169\" class=\"alignright size-medium wp-image-230181\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2026\/02\/system-cip-cohort-2-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2026\/02\/system-cip-cohort-2-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2026\/02\/system-cip-cohort-2.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Applicants must be 18 or older, a <span lang=\"haw\">Hawai&#699;i<\/span> resident or active military personnel stationed in <span lang=\"haw\">Hawai&#699;i<\/span>, and have a minimum of three years of professional culinary experience. Full tuition scholarships for Cohort 19 and 20, valued at $1,500 per student, are made possible through the Hawai\u2019i Ag &#038; Culinary Alliance <abbr>CIP<\/abbr> x <abbr>CIA<\/abbr> Workforce Development Scholarship Fund with support from the State of <span lang=\"haw\">Hawai&#699;i<\/span>. Scholarships for Native Hawaiian applicants are provided by the Office of Hawaiian Affairs.<\/p>\n<p>Since its launch in September 2024, the <abbr>CIP<\/abbr> x <abbr>CIA<\/abbr> program has provided
